Tropical cocktails just taste like summer vacation. One sip and you can practically feel the salty air filling your lungs while the late-afternoon sunshine warms your skin and deep-blue ocean waves gently roar behind you. We found two tropical treasures at our Clubs that offer a taste of island life — no passport required. Try them at the Clubs or make your own fruity cocktails at home.
Pineapple Jalapeño Margarita
White Columns Country Club in Milton, Georgia, has spiced up their margarita game with the Pineapple Jalapeño Margarita. This refreshing cocktail is a perfect balance of sweet (from the pineapple juice) and spicy (from the jalapeño). Have some fun and try rimming the glass with Tajin instead of salt.
- 1 ½ oz. Casamigos Tequila Reposado
- 1 oz. Cointreau
- ½ oz. lime juice
- 1 ½ oz. pineapple juice
- Jalapeño slices
Mix the first four ingredients together and pour over Tajin- or salt-rimmed glass of ice. Add jalapeño slices to taste and serve.
Myers’s Mai Tai
It’s not a tropical getaway without a mai tai. At Wind Watch Golf & Country Club in Hauppauge, N.Y., the Myers’s Mai Tai is a summer staple. You’ll feel more relaxed after just one sip!
- 1 ½ oz. white rum
- ½ oz. triple sec
- 2 oz. pineapple juice
- 4 oz. orange juice
- Splash of sour mix
- Splash of grenadine
- ½ oz. Meyers’s dark rum
- Orange and/or maraschino cherry to garnish
Fill a glass with ice. In a cocktail shaker, add white rum, pineapple and orange juices, triple sec and sour mix and shake. Using strainer, pour into glass with ice. Drizzle with a splash of grenadine and top with Meyers’s dark rum. Add orange slice and maraschino cherry to the rim for garnish.
